Chilling of chicken meat
Companies chill their chicken prior to shipping and print on their labels the chilling method. There are two methods in chilling:
1- water chilling,
2- air chilling,
the second method is far better to the value of your dollar. The first method (water chilling) causes the chicken drum to shrivel to approximately 2/3 of the precooking size due to water loss from meat, while the second method ( air chilling) does affect the size of precooking meat.

Chicken Protein or is it ..?
What did they inject chicken protein with..?
The Food Standards Agency (FSA) in the UK had investigated companies involved in marketing chicken meat for mislabeling their packages. During an interview with Mark woolfe, head of food authenticity, he indicated that an investigation has been launched a while ago for the Food Standards Agency. The agency is aware that water injection in chicken meat is a standard process.
In order to keep their chicken fresh looking, chicken companies such as Euro Foods Group, uses water to inject in chicken meat. These companies realized that water leaks from the meat after injection which defeats the purpose of the water injection. In order to come over the water leak problem, the companies started to mix protein with water in order to retain the water inside the meat. The problem revolves around the type of protein used to inject the meat. Companies producing the protein for injection are not properly labeling their products. The FSA has discovered that the protein used for injection is not a chicken protein, as they claim. Scientific testing indicated that the injected protein originated from pork and beef. In addition to mislabeling the process contradict religious believes to Muslim and Jews. Other research indicated that some companies have used whey protein to inject chicken. This procedure is very harmful to people who have allergies to whey protein.
